Title: Lemon, Oil, And Honey Dressing
    Categories: Salad, Dressings
    Yield: 4 Servings

    4 tb Sunflower oil
    2 tb Lemon juice
    1 tb Clear honey
1 1/2 tb Fresh mint -OR-
    1 ts Dried mint (optional)

You can blend these in a blender or food processor, or heat the honey
gently until it is thin enough to blend in with the other
ingredients. This dressing is good for salads containing sweet
vegetables, for example, carrots, beets, fennel.
