    Title: Dirty Dave's Taco Seasoning Mix
    Categories: Spices, Chilies
    Yield: 1 /2 cup

    6 ts Mexene chilli spice mix
    5 ts Paprika
    4 1/2 ts Ground cumin
    1 tb Onion granules
    1 tb Garlic granules
    1/4 ts Cayenne; more to taste

    Mix well in a bowl.

    Keep unused portion in a sealed container in the ice
    box to keep the herbs/spices fresh.

    2 heaping tablespoons equal a packet.

    Makes about 1/2 cup of mix.

    Title: Tavern Chili
    Categories: Chili, Beef, Microwave, Mexican, Beans
    Yield: 6 Servings

    1 lb Ground Beef
    2 tb Chili Powder
    1 Clove Garlic; minced
    1 Pouch Soup Mix *
    3/4 c Beer or Water
    1 cn Tomatoes **
    1 cn Kidney Beans; drained ***
    1 Cheddar Cheese; shredded
    1 Sour Cream

    * Use Campbell's Onion Mushroom Soup and Recipe Mix ** 14 1/2 oz can,
    undrained and cutup *** 15 oz can

    Crumble beef into 2 qt microwave-safe casserole; stir in chili powder
    and garlic. Cover with lid; microwave on HIGH 5 mins or until beef is
    no longer pink, stirring once during cooking to break up meat. Spoon
    off fat. Stir in soup mix beer or water, tomatoes with their liquid
    and beans. Cover; microwave on HIGH 3 mins or until hot and bubbling.
    Stir again. Reduce power to 50%. Cover; microwave 10 mins or until
    flavors ar well blended, stirring once during cooking. Let stand,
    covered, 5 mins. Garnish with cheese and sour cream.

    Title: Hamburgers (Tavern Style)
    Categories: Five, Beef, Breads, Cheese
    Yield: 4 servings

    1/2 ts Oil, or unsalted butter
    2 lb Ground chuck
    Salt & black pepper
    4 sl Cheese
    4 Soft hamburger buns
    Lettuce leaves, sliced
    - tomatoes & condiments

    Add oil or butter to a large cast iron or stainless
    steel skillet and place over medium heat. Gently divide
    ground beef into 4 small piles of around 8 ounces each,
    and then lightly form these into thick patties of around
    3 1/2" diameter, like flattened meatballs. Season
    aggressively with salt and pepper.

    Increase heat under skillet to high. Put hamburgers into
    the skillet with plenty of distance between them and
    allow them to cook, without moving, for approximately 3
    minutes. Use a spatula to turn hamburgers over. If using
    cheese, lay slices on meat.

    Continue to cook until meat is cooked through,
    approximately another 3 to 4 minutes for medium-rare.
    Remove hamburgers from skillet and allow to rest for
    approximately 5 minutes; meanwhile, toast the buns.
    Place hamburgers on buns and top as desired.
