    MMMMM----- Recipe via Meal-Master (tm) v8.06

    Title: Cola Burgers
    Categories: Beef, Breads, Cheese, Beverages, Sauces
    Yield: 6 servings

    1 lg Egg
    1/2 c Cola; divided
    1/2 c Crushed saltines
    6 tb French salad dressing;
    - divided
    2 tb Grated Parmesan cheese
    1/4 ts Salt
    1 1/2 lb Ground beef
    6 Hamburger buns; split

    MMMMM---------------------OPTIONAL TOPPINGS--------------------------
    Lettuce leaves
    Sliced tomato
    Sliced red onion
    Pickles
    Sliced cheese

    In a large bowl, combine egg, 1/4 cup cola, cracker
    crumbs, 2 tablespoons salad dressing, Parmesan cheese
    and salt. Crumble beef over mixture and mix lightly but
    thoroughly. Shape into six 3/4"-thick patties (mixture
    will be moist).

    In a small bowl, combine remaining cola and salad
    dressing; set aside.

    Grill burgers, covered, over medium heat for 3 minutes
    on each side. Brush with cola mixture. Continue grilling
    6-8 minutes, brushing and turning occasionally.

    Serve on buns. Serve burgers with toppings as desired.

    Title: Black Bean Brownies
    Categories: Chocolate, Cookies, Beans, Snacks
    Yield: 12 servings

    15 oz Can black beans; rinsed,
    - drained
    1/2 c Semisweet chocolate chips;
    - divided
    3 tb Oil
    3 lg Eggs; room temp
    2/3 c (packed) brown sugar
    1/2 c Baking cocoa
    1 ts Vanilla extract
    1/2 ts Baking powder
    1/8 ts Salt

    Place the beans, 1/4 cup chocolate chips and oil in a
    food processor; cover and process until blended. Add
    eggs, brown sugar, cocoa, vanilla, baking powder and
    salt; cover and process until smooth.

    Transfer to a parchment-lined 8" square baking pan.
    Sprinkle with remaining chocolate chips. Bake @
    350ºF/175ºC for 20-25 minutes or until a toothpick
    inserted in center comes out clean. Cool on a wire rack.
    Cut into bars.

    Yield: 36 servings

    48 oz (2 bags) frozen, fully
    - cooked, Italian meatballs
    12 oz Jug Heinz chili sauce
    10 oz Jar grape jelly

    Prepare meatballs according to package instructions.

    In a large skillet, combine chili sauce and jelly; cook
    and stir over medium heat until jelly has melted. Add
    meatballs to pan; heat through.

    Title: Pork & Sauerkraut
    Categories: Pork, Vegetables, Fruits, Herbs
    Yield: 4 servings

    2 lb Bone-in country-style pork
    - ribs
    1 md Onion; chopped
    1 tb Oil
    14 oz Can sauerkraut; undrained
    1 c Unsweetened applesauce
    2 tb Brown sugar
    2 ts Caraway seeds
    1 ts Garlic powder
    1/2 ts Pepper

    In a Dutch oven, cook ribs and onion in oil until ribs
    are browned and onion is tender. Remove from the heat.
    Combine remaining ingredients and pour over ribs.

    Cover and bake @ 350ºF/175ºC until ribs are tender,
    1 1/2 to 2 hours.

    Title: Zucchini Cobbler

    Yield: 20 servings

    8 c Chopped, seeded, peeled
    - zucchini
    2/3 c Lemon juice
    1 c Sugar
    1 ts Ground cinnamon
    1/2 ts Ground nutmeg

    MMMMM---------------------------CRUST--------------------------------
    4 c A-P flour
    2 c Sugar
    1 1/2 c Cold butter; in cubes
    1 ts Ground cinnamon

    Set oven @ 375ºF/190ºC.

    In a large saucepan over medium-low heat, cook and stir
    zucchini and lemon juice until zucchini is tender, 15-20
    minutes. Stir in sugar, cinnamon and nutmeg; cook 1
    minute longer. Remove from the heat; set aside.

    In a large bowl, combine flour and sugar; cut in butter
    until mixture resembles coarse crumbs. Stir 1/2 cup into
    zucchini mixture. Press half the remaining crust mixture
    into a greased 15" X 10" X 1" baking pan. Spread zucchini
    mixture over top; crumble remaining crust mixture over
    zucchini. Sprinkle with cinnamon.

    Bake until golden and bubbly, 35-40 minutes. Cool in pan
    on a wire rack.

    Title: Buttery Potato Chip Cookies
    Categories: Cookies, Potatoes, Nuts
    Yield: 4 1/2 dozen

    2 c Butter, softened
    1 c Sugar
    1 ts Vanilla extract
    3 1/2 c A-P flour
    2 c Crushed potato chips
    3/4 c Chopped walnuts

    Set oven @ 350ºF/175ºC.

    In a large bowl, cream butter and sugar until light and
    fluffy, 5-7 minutes. Beat in vanilla. Gradually add
    flour to creamed mixture and mix well. Stir in potato
    chips and walnuts.

    Drop mixture by rounded tablespoonfuls 2" apart onto
    ungreased baking sheets. Bake 10-12 minutes or until
    lightly browned. Cool 2 minutes before removing from
    pans to wire racks.

    1 ts Dried parsley flakes
    1 ts Salt
    1/2 ts Dried thyme
    1/4 ts Pepper
    3 c Milk
    6 c Thin sliced, peeled
    - potatoes
    1 1/2 c Chopped fully cooked ham
    1 sm Onion; grated

    Set oven @ 375ºF/190ºC.

    In a large saucepan, melt 4 tablespoons butter over
    medium heat. Stir in flour, parsley, salt, thyme and
    pepper until smooth. Gradually add milk; bring to a
    boil. Cook and stir 2 minutes.

    In a large bowl, combine potatoes, ham and onion; place
    half the mixture in a greased 2 1/2 qt. baking dish. Top
    with half the sauce; repeat layers.

    Cover and bake until potatoes are almost tender, 65-75
    minutes. Dot with remaining 2 tablespoons butter. Bake,
    uncovered, until potatoes are tender, 15-20 minutes.

    1 ts Vanilla extract

    1 c Mashed ripe bananas
    1/2 c Chopped walnuts
    Confectioners' sugar; opt

    In a bowl, combine butter, sugar and cocoa. Stir in
    eggs, milk and vanilla. Blend in flour, baking powder
    and salt. Stir in bananas and walnuts.

    Pour into a greased 9" square baking pan. Bake @
    350ºF/175ºC until a toothpick comes out with moist
    crumbs, 40-45 minutes. Cool on a wire rack. Cut into
    bars. If desired, dust with confectioners' sugar just
    before serving.

    Title: Chocolate Tofu Pie
    Categories: Pastry, Chocolate, Vegetables
    Yield: 10 servings

    Pastry for 9" single-crust
    - pie
    24 5/8 oz (2 pkg) silken firm tofu
    1/4 c Honey
    2 ts Vanilla extract
    1/2 ts Almond extract
    2 1/2 c Semisweet chocolate chips;
    - melted
    Whipped cream; opt
    Sliced fresh strawberries;
    - opt

    Roll out pastry to fit a 9" pie plate. Transfer pastry
    to pie plate. Trim pastry to 1/2 in. beyond edge of
    plate; flute edges. Line unpricked pastry with a double
    thickness of heavy-duty foil. Fill with dried beans,
    uncooked rice or pie weights.

    Bake @ 350ºF/175ºC for 8 minutes. Remove foil and
    weights; bake 5-7 minutes longer or until golden brown.
    Cool on a wire rack.

    In a blender or food processor, combine the tofu, honey
    and extracts. Cover and process until smooth. Add melted
    chocolate; cover and process until blended.

    Transfer to pie shell. Cover and refrigerate for at
    least 2 hours. Garnish with whipped cream and
    strawberries if desired.
