Title: Fennel Salad w/Citrus Dressing

1 lg Fennel bulb; thin sliced
1 sm Apple; thin sliced
1/4 c Sliced sweet onion
MMMMM--------------------------DRESSING-------------------------------
1/3 c Olive oil
1/2 ts Grated lemon zest
2 tb Lemon juice
1/2 ts Grated orange zest
2 tb Orange juice
1/2 ts Dijon mustard
1/2 ts Salt
1/8 ts Pepper
Combine fennel, apple and onion. In another bowl, whisk
together dressing ingredients. Pour over salad; toss to
coat. Refrigerate until serving.
