MMMMM----- Recipe via Meal-Master (tm) v8.06
 
      Title: Carrot Cake

      Yield: 12 servings
 
      2 c  A-P flour
      2 c  Sugar
      2 ts Ground cinnamon
      1 ts Baking soda
    1/2 ts Salt
      3 lg Eggs; room temp
  1 1/2 c  Oil
      2 c  Fine grated carrots
      1 ts Vanilla extract
      1 c  Well-drained, crushed
           - pineapple
      1 c  Sweetened shredded coconut
      1 c  Chopped nuts
MMMMM-------------------CREAM CHEESE FROSTING------------------------
      6 oz Cream cheese; softened
      6 tb Butter; softened
      3 c  Confectioners' sugar
      1 ts Vanilla extract
           Additional chopped nuts
 
  In a large bowl, combine the flour, sugar, cinnamon,
  baking soda and salt. Add the eggs, oil, carrots and
  vanilla; beat until combined. Stir in pineapple, coconut
  and nuts.
  
  Pour into a greased 13" X 9" baking pan. Bake @
  350oF/175oC for 50-60 minutes or until a toothpick
  inserted in the center comes out clean. Cool on a wire
  rack.
  
  For frosting, in a small bowl, beat cream cheese and
  butter until light and fluffy, 5-7 minutes. Add the
  confectioners' sugar and vanilla; beat until smooth.
  Frost cake. Sprinkle with additional nuts. Store in the
  refrigerator.
