Zucchini Spaghetti Soup

      Title: Zucchini Spaghetti Soup
 Categories: Soups, Zucchini
      Yield: 4 Servings
 
      1 md Onion; minced
      1 cl Garlic; minced
    1/4 c  Olive oil
  1 1/2 lb Zucchini (4 md);
           - thinly sliced
      1    Tomato; peeled, chopped
    1/2 ts Basil
           Salt & pepper
      1 c  Vegetable stock or
           - chicken broth
    1/2 lb Spaghetti; uncooked -OR-
      4 c  Vegetable spaghetti fibers
 
  Saute onion and garlic in olive oil in large saucepan. Add zucchini
  rounds, tomato, seasonings, and stock. Cover and simmer over low heat
  for 1-1/2 hours. Add short lengths of uncooked spaghetti and continue
  simmering another 10 minutes.
  
  Note:
  
  If vegetable stock and vegetable spaghetti are used, this is an all
  vegetable dish!
