    Title: Eggplant Sambal (Jaffna Style)

    Yield: 1 Batch

    1 lb Eggplant
    1 Onion
    2 Green chiles
    1/2 c Coconut milk
    1 tb Lime juice
    Salt

    Bake the eggplant whole for one hour at 400?F or until it wrinkles.
    Allow eggplant to cool, then peel and mash it. Mince onion and
    chiles, and add to the eggplant along with salt and lime juice. Mix
    thoroughly. Serve at room temperature.
