Title: Corn Bread Dressing

Yield: 1 Batch
3 Eggs; beaten
2 c Buttermilk
2 tb Shortening; melted
2 ts Salt
2 1/2 c Corn meal; sifted
3 ts Baking powder
1 ts Baking soda; dissolved in:
1 tb Water
3 tb Butter; melted
Water; hot
Onion
Parsley
Celery
Salt & pepper; to taste
To the well beaten eggs, add the milk, shortening, and salt.
Sift together the baking powder and meal, and slowly stir into the egg
mixture, adding enough of the meal to make a medium batter. Beat well.
Dissolve soda in 1 tb water and add to the batter. Pour the batter
into a greased shallow baking pan. Bake in a hot oven 450?F for 20
minutes or until bread begins to brown.
Allow bread to cool; then break into small pieces, crumbling, add the
melted butter and season with onion, celery, salt, and pepper, or any
desired seasonings.
Moisten well with hot water. Fill turkey or hen and roast as required.
