Because there's more to it than that.

Whether you make a paper book or an eBook, there are costs involved.

Part of the Kickstarter is to see what the demand for the book is. If there isn't enough demand, then everyone can walk away from the project without taking much of a financial hit.

Also, based on the Kickstart demand, they may see that there is only limited demand and they will choose a more cost effective way to deliver the product.
